Microgreens are particularly popular with chefs to garnish food and enhance salads but are also a very healthy foodstuff because seedlings at this stage of growth are packed with beneficial nutrients and antioxidants. Microgreens are typically harvested at the fully opened cotyledon stage or the first true leaf stage.
